SAY CHEEEEESE!!

You'll probably ask why I'm writing in english. Well, it's pretty simple. Last 2 months I'm getting most of the traffic from US. Probably from my Croatian friends, and their friends and families. Thanx Lana!

Thinking of average american home cooking, images of prefabricated meals dominates over classical cooking with fresh ingredients. At last, that is how we Europeans, Mediterraneans see it. Americans have great tradition of cooking, but corporate thirst for money succeeds in the battle against Cajun, Tex-Mex, all those great American heritage styles of cooking.

Don't panic! Never ever give up!

Talking about cheeses, as far as I can see, there is a renaissance in US. All those Cheddar varieties will eliminate processed and spray cheese rubbish, hopefully.

Today, I'll show you simple but exceptional, fresh cheese with chive. So simple, it qualifies as "for dummies" type of the recipe.

Fresh cheese with chives

Ingredients:
1 liter (2 pounds) yogurt
1/2 teaspoon of salt
1 teaspoon chives (fresh or dried)

Instructions:
1. Put 1 liter pack of yogurt (closed) into big pan, filled with water and let it boil for ten minutes.
2. Turn the fire off and let yogurt cool completely.
3. Drain excess of water trough cheese cloth, and press it lightly for 30 minutes.
4. Take the cheese out, add salt and chives, mix well and return to cheese cloth.
5. Press it with heavier object and leave for three hours.
6. Finally, you have creamy fresh cheese.
